Nestum® Honey Dates Streusel Muffins


    A (Streusel Topping)
  • 100g unsalted butter
  • 50g brown sugar
  • ⅛ tsp salt
  • 80g plain flour
  • 20g rolled oats
  • 60g honey dates, finely chopped
  • 50g Nestum® cereal
    B (Muffin Batter)
  • 140g unsalted butter, melted and cooled
  • 180 ml fresh milk
  • 2nos large eggs
  • 65g brown sugar
  • 80g castor sugar
  • 1nos fresh lemon, grated rind only
  • 160g plain flour
  • 2.5 tsp baking powder
  • ¼ tsp salt
  • 70g honey dates, coarsely chopped
  • 70g Nestum® cereal


    For streusel topping:
  1. Rub together ingredients A. Chill until ready to use.
    For muffin batter:
  1. Combine ingredients B together and mix well.
  2. Sift ingredients C together, fold into ingredients B mixture and combine well. Add in ingredients D and mix well.
    Assemble and bake:
  1. Divide the batter to fill medium-sized paper muffin cups to nearly ¾ full.
  2. Crumble some streusel topping over each muffin.
  3. Bake in the preheated oven at 170 degree C for approximately 25 minutes or until cooked.
