Sam’s “Energising” Sweet Potato Bowl

Upon seeing how exhausted his wife is after a full day with the kids, Sam heads to the kitchen to make his goto dish for whenever she needs a quick pick-me-up. It’s a delicious energy bowl with her favourite Japanese Sweet Potatoes.

Ingredient A:

  • 3 800g Tesco Eat Fresh Japanese Sweet Potatoes - washed, peeled and cut into big cubes
  • 4 pcs Hard tofu - dried on a kitchen towel
  • ½ tsp Tesco Mixed Herbs
  • 50g Tesco Olive Oil
  • Salt to taste 

Ingredient B:

  • 100g Tesco Eat Fresh Mixed Coral
  • 1 pc Tesco Eat Fresh Japanese Kyuri Cucumbers - split into half, then sliced
  • 1 pc Lime - cut into half, juice squeezed over vegetables
  • 100g Tesco Eat Fresh Cherry Tomatoes - sliced into halves
  • 60g Tesco Edamame - boiled, and beans removed from pods; set aside in cold water to stop the cooking process

Ingredient C:

  • 2 tbsp Tesco Smooth Peanut Butter
  • ½ tbsp Tesco Light Soya Sauce
  • 1 tbsp Tesco Olive Oil

Ingredient D:

  • 5g Tesco Dried Condiment - Black and White Sesame Seeds


1. Ingredients A: Put the sweet potato cubes and whole tofu in a baking tray. Sprinkle with salt and mixed herbs. Drizzle olive oil over the sweet potatoes and tofu. Bake at 200°C for 20 minutes. Once lightly baked, remove from the oven. Cut the tofu into slices.
2. Ingredients B: Prepare accordingly and set aside for plating later.
3. Ingredients C: Mix in a bowl to make the special peanut dressing.
4. Place all ingredients into a flat bowl. Drizzle the peanut dressing over them.
5. Energy bowl is ready to be served.
